Freshly grated nutmeg
1 Tablespoon dark brown sugar
1 Cup espresso or strong coffee
1 1/2 oz. High Mark Moonshine or High Mark Bourbon
1/4 cup just-whipped heavy cream
- Caramelize The Sugar: Grate the nutmeg onto a plate. Sprinkle the dark brown sugar onto the plate. Coat the rim of an Irish Coffee Mug with the mixture. Use a Creme Brûlée burner to melt and caramelize the sugar onto the rim. Carefully watch the mug, as the sugar will begin to melt and caramelize immediately.
- Heat The Coffee: Once the brown sugar rim is caramelized, add a splash (2 Tablespoons) of the hot coffee and swirl it around the mug.
- Move quickly for the next few steps: Add the High Mark Moonshine or High Mark Bourbon to the Irish coffee mug, and carefully ignite it.
- Let the flame burn out. When the flame dies down, pour in the remainder of the hot coffee and swirl to mix.
- Top with soft-whipped cream. Sprinkle with nutmeg or cinnamon. CHEERS!
